The octopus is a nutritious food and suitable for those who watch their diet. 90 grams have about 140 calories of which 16 come from fat. The octopus is a source of vitamins such as B3 and B12. Octopuses are fished from small coastal vessels with the use of special equipment allowing fisherman to fish only a short distance from Kalymnos. The “olos” (octopus ink) removed from the octopus when it’s still alive, can be kept up to three hours on ice on board the ship and delivered to our packaging facility where this magnificent Kalymnian treat will be prepared by the fishermen’s women.
