Anchovy is a small fish with a length of 15 to 20 cm, which lives mainly in the Greek seas. The official name is "the engraflis egkrasicholos" (engraulisencrasicholus) and belongs to the family engraflides (engraulidae). Its name comes from a word meaning in ancient Greek, "proud" or "arrogant". The back and sides of anchovy is blue-green, while the belly is white to silver and shiny.

Its body is thin and long, the long snout and upper jaw protrudes. Its mouth reaches behind the eyes and bevel down. Its teeth are small and pointed. It has fins on its back, chest and a low abdominal area. Its tail is forked. These fish live in hot areas, and prefer to live in schools and prefers the surface waters in Spring and Summer. In the winter Anchovies prefers to stay on the seabed at a depth of 100-200 meters, because that's where the temperatures are milder. It feeds on tiny crustaceans and other fish eggs. When weather begins to warm up- so they can reproduce – they head for the coast to leave their eggs, which float with the plankton. During this period, we may see schools of anchovies, consisting of millions and sometimes billions of fish.

This fish is found only in the sea area of Kalymnos, fished by the fishermen of Kalymnos and delivered the same day to our facilities were the women begin the preparation. The fish are washed one by one, filleted and salted, the skin is removed and then smoked in flavors of (thyme, savory, oregano, products from the mountains of Kalymnos) and then pack in glass jars sealed with the vacuum method thus ensuring that the product maintains its superior product quality.
